The general characteristics are: Food in North China tastes more salty (it's not saying is too salty, it's just you don't taste other tastes that much, for example not sweet); in the South it's sweeter (not the American sense of sweet, they just put a dash of sugar in many dishes); in West China (like Shanxi), it's more acidic as in they use vinegar a lot; in Sichuan, Hubei, Hunan etc., it's hot and spicy; in Guangdong people eat a lot soup. But these are just simplified images of food preferences in China. Now many cities have restaurances of different styles. Every area has awesome tasty food; but if one doesn't cook well, any place can have not so great tasting food. Worth a try, or many tries, though! If you are in China, there are tons and tons of good restaurants and street food everywhere.

I prefer southern chinese (Guangdong / Fujian) food, tasty yet not too oily. but also I prefer noodles more than rice :D
